Raw coffee is more than a commodity. RAW is a course dedicated to green coffee: its classification, logistics, ethics, and the global market structures that shape its journey. You will explore the fundamentals of green grading, moisture and density analysis, defect identification, and storage best practices, but also the political and economic frameworks that decide what raw coffee is worth — and to whom. From origins and terroir to shipping routes and trade models, this course will help you build a critical, confident view of the green coffee world. You’ll learn how to evaluate green quality and protect green coffee through proper handling, while connecting that knowledge to sourcing ethics, traceability, and producer relationships. Aligned with The Better Coffee values, RAW challenges the illusions of “neutral trade” by showing how structural imbalances and colonial histories still define access, quality, and pricing today. It invites you to rethink your role as a green buyer, trader, roaster, or quality manager in building fairer systems.
