About This Course
A coffee profile is a conversation — between you, heat, water, time, and the bean. The Profile is a course dedicated to the science and art of roasting and brewing, designed for anyone who wants to move beyond recipes and think systemically. You will learn how to interpret green coffee’s potential, design roast curves, and develop repeatable brewing strategies that respect origin, resources, and the people behind the coffee. This course explores the critical variables: heat transfer, energy balance, chemical reactions in the roaster, and the principles of extraction through water chemistry, flow rate, and temperature. You will connect these variables to flavor, but also to cost, waste, and environmental impact, developing a mindset for sustainable quality. We will challenge myths of “perfection” and show how profiling is an ongoing, ethical dialogue: with the bean, with its farmers, and with the communities who drink it. The Profile helps you build a system of roast and brew decisions that is creative, consistent, and deeply respectful. In-person, you will join 5 full days of lab experiments, guided cuppings, machine calibration workshops, and Soul, Ritual & Aesthetic sessions. Online, you will join six 4.5-hour live sessions with translation, assignments, and collaborative discussions.
