About This Course

Coffee begins in the mind. The School of Percept is where you sharpen your senses and expand your perceptual horizon. From psychophysics to panel calibration, this course builds deep sensory awareness far beyond “cupping scores.” You will study retronasal versus orthonasal smell, memory recall, and the cultural biases that distort our sense of taste. Together, we build a personal sensory dictionary, mapping your own flavor identity while exploring how language, emotion, and culture shape perception. You will also learn foundational sensory analysis methods — including The Better Coffee Ranking Method, Coffee Value Assessment (CVA), and traditional frameworks like the 2004 CQI/SCA cupping protocol — to compare, critique, and redesign sensory evaluation for yourself. In-person, you will spend 6 immersive days in lectures, workshops, guided tastings, and practice, with informal learning woven through shared meals and Soul, Ritual & Aesthetic sessions. Online, you’ll join eight 4.5-hour live sessions, with real-time translation, homework, and independent sensory exercises using your training kit. Why does it matter?
